Edward Langley ab5f3a5a86 feat(build): add profiling profile configuration ...

Add a new [profile.profiling] section to Cargo.toml.

This profile inherits from release but with:
- strip = false: Keep debug symbols for profiling
- debug = 2: Full debug information for analysis

Useful for generating profiling data with symbol information.
